Scallop Zoodle Carbonara

A super easy & delicious way to combine my 3 favourites= scallops + zucchini + bacon! This recipe is so easy to make & ready in less than 30 minutes. Promise you would love this as much as I do!

INGREDIENTS

  • 2 ounces spaghetti pasta
  • 1/2 tsp salt
  • 1/2 tsp olive oil
  • 1/4 cup pasta water
  • 4 slices of chopped bacon
  • 1 tbsp butter
  • 8 large scallops
  • 1/8 cup white wine/ beer
  • 3-4 cloves minced garlic
  • 1/2 medium onion diced
  • 2-3 medium zucchini
  • 3 eggs
  • 1/2 cup parmesan
  • 1 tsp garlic powder
  • Salt & Pepper to taste
  • 1 egg yolk

DIRECTIONS

  1. Boil 2 cups of water in a shallow pot. Add in spaghetti pasta, 1/2 tsp of salt, 1/2 tsp olive oil. Turn off heat & cook for 10 minutes until al dente. Drain but reserve 1/4 cup of pasta water.
  2. Trim & spiralize zucchini. 
  3. In a separate pan, cook the bacon for 6-8 minutes until brown & crispy. Remove from the pan. 
  4. In the same pan, add 1 tbsp of butter. Pat your scallops dry & generously salt & pepper. Add in your scallops & cook on for 2-2.5 minutes. Flip & cook for another 3 minutes. Remove from heat. 
  5. In the same pan, deglaze the pan with white wine/beer. Add in your garlic & onions & zucchini. Cook for 3 minutes & remove from heat. 
  6. Add in your pasta into the pan. Mix together the eggs, parmesan, pasta water, garlic powder & combine into the pan. Add in your bacon & zucchini. 
  7. Serve with extra parmesan cheese, an egg yolk, & freshly cut basil. Enjoy!
