This Chinese inspired dessert is so easy and quick to make! This can be eaten hot or cold depending on your preference and season! This recipe is done in less than 30 minutes and requires only 5 ingredients! Enjoy!

INGREDIENTS
Taro:
- 3 cups of cubed taro root (sugar cube sized)
- 8 cups of water
- 1 can of coconut milk
- 3/4 cup/ 150g of rock sugar
- 2 tbsp of sliced ginger
Tapioca:
- 1 cup of tapioca pearls
- 5 cups of water
DIRECTIONS
- Peel & cube taro root (3 cups). The remainder you can freeze for another time.
- Boil 5 cups of water. Once water is boiled, add in tapioca pearls. Once this boils, simmer for 20 minutes. After simmering for 20 minutes, strain tapioca.
- In another pot, boil 8 cups of water. Once boiled, combine taro root and simmer for 10 minutes.
- After 10 minutes, combine your can of coconut milk, rock sugar, and sliced ginger. Let it simmer for another 10 minutes.
- Combine your strained tapioca pearls into your pot and remove the ginger!
- Serve either hot or cold! Enjoy!
