For you meat lover fans out there… this one is for you! This recipe is honestly so easy to make and leaves your house smelling like a Sage Wellness store. I personally love cooking with lemongrass! For those of you who don’t know what it is, it is a grass herb that is used widely in Asian cuisine. You can either buy them fresh or frozen from any Asian grocery store. I personally like to buy them frozen as I find it easier to use as I don’t have to chop them up! However, fresh options are always amazing as well. If you do buy fresh lemongrass, just be sure to trim off the top and base of the stalks that are more dry. Lemongrass is most commonly used for teas, broths, soups. however, I love to use them for any of my meat dishes as I find that it gives it the most subtle yet delicious citrus flavor.

INGREDIENTS
1 pack of baby back ribs
1/2 cup of finely chopped lemongrass (you can blend it in a food processor to make it more fine)
4 cloves of minced garlic
3 star anise
Marinade:
2 tbsp of sesame oil
1/4 cup of fish sauce
1/4 cup of sugar/ sweetener
1/4 cup of hot water
1 tbsp of apple cider vinegar
DIRECTIONS
Using your INSTANT POT, click the SAUTE option
Put 1 tbsp of coconut oil in and saute your garlic, lemongrass, and star anise. Add in your ribs and lightly brown on each side for 3-5 minutes.
Combine your marinade into your INSTANT POT.
Set pot to MANUAL HIGH PRESSURE for 25 minutes. Once it is finished, do a natural release for 15 minutes, and then finish with the quick release.
Layer your ribs onto the pan, coat with the sauce from your instant pot. Turn your oven to BROIL on HIGH for 3 minutes on each side.
