Course Dinner, Main Course
Beef Marinade
- 8 oz thinly sliced beef flank steak or top sirloin works well
- 1 tsp soy sauce
- 1/2 tsp salt
Other Ingredients
- 225 grams flat wide rice noodles
- 5 Chinese broccoli stems, cut into 2-inch pieces
- 2 cloves garlic, minced
- 2 eggs
- 1 tbsp soy sauce
- 1.5 tbsp oyster sauce
- 1 tbsp sugar
- 1 tbsp rice vinegar
- 1/4 tsp black pepper
- 2 tsp sesame oil
- 2 tbsp vegetable oil
- 1 stalk chopped scallion for garnish (optional)
Prepare the Sauce
In a small bowl, mix together soy sauce, oyster sauce, sugar, and black pepper. Set aside.
Cook the Beef
Heat 1 tablespoon of vegetable oil in a wok or large pan over medium-high heat.
Add the sliced beef and stir-fry until medium-rare, approximately 30 seconds - 1 minute. Remove the beef from the pan and set aside.
Cook the Vegetables
In the same pan, add another tablespoon of oil.
Add minced garlic and stir-fry for about 30 seconds until fragrant.
Add the Chinese broccoli and stir-fry for 1-2 minutes until they are tender-crisp.
Push everything to one sided, crack the eggs into the pan, and scramble them until they are just cooked.
Combine and Serve
Add in the sesame oil and garnish with scallion. Mix everything together in the pan until well combined and heated through.
