Milk Tea Foam with Brown Sugar Boba

Step aside Dalgona… this one is for the boba lovers & non-coffee drinkers (me). Brown sugar boba tea is a classic boba favourite which I love but I find myself feeling pretty guilty after drinking a whole one just because of how sweet it is! Thought I would combine brown sugar boba with milk tea foam to create this fun drink to have during this quarantine time! For this recipe you will need to purchase Instant Milk Tea- there are so many options you can choose from when visiting your local asian supermarket! My favourite brands are the Royal Milk Tea & the Lipton Gold Milk Tea. Hope you guys enjoy the recipe!

INGREDIENTS

Brown Sugar Boba Pearls

  • 1/4 cup dry tapioca pearls (any colour)
  • 3 cups water
  • 1/4 cup packed brown sugar
  • 1 tsp corn starch
  • 1/8 cup water

Milk Tea Foam

  • 1 package of instant milk tea (16.5g). The brand I use: Lipton Gold Milk Tea
  •  3 tbsp refrigerated coconut cream (you can sub for whipping cream )

Drink Base

  • 1 cup oat milk
  • 1 black tea bag or 1 tsp loose leaf black tea. (I use Orange Pekoe) 
  • 1/2 cup ice

DIRECTIONS

  1. Boil 3 cups of water in a pot. Pour in your dry tapioca pearls- bring to boil & then simmer & cover for 15-30 minutes depending on the size of your pearl. Don’t forget to stir occasionally so that it does not stick to the bottom of the pot!  (Sometimes I cook it the night before & then let it sit in the pot and strain in the morning). Once the pearls are “translucent” & cooked through- strain.
  2. Using the same pot heat together the cornstarch, 1/8 cup water, & the 1/3 cup packed brown sugar. Continue to mix together so that it does not burn! Once the mixture has become “sticky” around 5 minutes, pour in your cooked tapioca pearls. 
  3. In a separate pot, boil together 1 cup of oat milk & 1 black tea bag or 1 tsp of loose leaf black tea. Let the tea leaves steep for 10-15 minutes in the hot milk. Once steeped, strain & refrigerate. 
  4. In a mixer, mix on high speed the milk tea instant powder and coconut cream/whipping cream together for 5 minutes until fluffy & combined.
  5. In a tall drinking glass, tilt the glass at a 45° and pour your brown sugar syrup over it starting at the top letting the tapioca pearls slide down to create a “dripping” effect. Scoop your ice in, pour your milk tea in & top with your milk tea cloud foam. Enjoy!
