Seriously Delicious Ginger Cookies

Let this be a warning for all of those who try this recipe… these cookies are DANGEROUS. I repeat DANGEROUS. Seriously, once you have one, you cannot stop. The soft, chewy, and spicy nature of these cookies make them hard to resist. Next thing I know, I’ll have to remove this post because of the chaos I have caused… haha. Jokes aside, this is one of my all-time go-to recipes for a quick, easy, and scrumptious snack.

INGREDIENTS

  •  3/4 cup butter (cubed & softened)
  • 1 cup brown sugar
  • 1 egg
  • 1/4 cup molasses (Tip: oil your measuring cup prior to pouring this in)
  • 1 tbsp of orange juice
  • 1 tsp of vanilla extract
  • 2 1/3 cup of flour
  • 1 tsp of baking soda
  • 1 tsp of cinnamon
  • 2 tsp of ground ginger
  • 1/2 tsp of ground cloves
  • 1/4 tsp of salt
  • 1/4 cup of white sugar (for rolling)

DIRECTIONS

  1. Sift together the flour, baking soda, cinnamon, ginger, ground cloves, and salt. Set aside.
  2. Cream together the butter & sugar until light and creamy. Add in the egg, molasses, orange juice, and vanilla extract. Gradually add in your sifted mixture. Mix until all ingredients are combined. 
  3. Place your mixture in the freezer for about 15 minutes and preheat the oven to 350 F.
  4. Remove your mixture from the freezer. Using a spoon, scoop up your mixture and roll into 1 inch balls. Then roll in the white sugar. 
  5. Line your baking pan with parchment paper, and set your cookies on the paper. Make sure they are at least 2 inches away from each other. Using another spatula, slightly flatten out each cookie.
  6. Cook for 8-10 minutes depending on the size of your cookie. Once cooked, let the cookies sit on the pan for 3 minutes before transferring to a cooling rack.
  7. Serve & Enjoy! =)
