Looking for a GF Carrot Cake Cupcakes? Look no further! I must caution you, these cupcakes are SUPER addicting! They are so light and airy, and SOO moist. Honestly this is probably the most moist cupcake I’ve ever made in my life. I’ve tested this recipe 3 times, and each time has been fail-proof so I promise you these will be a success! And don’t even get me started on the cream cheese frosting- it is delicious! A secret I use? Lemon juice, I find that it adds that nice acidity to help balance out the sweetness and creaminess. Now consider yourselves warned ;).

INGREDIENTS
Carrot Cake Cupcakes
- 3/4 cup grated carrots (about 2 medium carrots)
- 3 large eggs
- 1/2 cup brown sugar
- 1/2 cup coconut oil/ olive oil
- 2 tsp vanilla extract
- 1 tsp grated ginger
- 1 + 1/2 cup almond flour
- 3 tbsp coconut flour/ GF flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 1 + 1/2 tsp cinnamon
- 1/4 tsp nutmeg
Cream Cheese Frosting
- I package of Cream Cheese (250g)
- 1 cup icing sugar
- 2 tsp lemon juice
- 2 tsp heavy whipping cream
DIRECTIONS
- Preheat oven to 375 F.
- In a stand mixer, combine eggs, brown sugar, coconut oil, vanilla extract, and ginger together. Mix until incorporated. In the same bowl, combine almond flour, coconut flour/ GF flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Mix until combined. Do not over mix! Stir in your carrots.
- Line your cupcake tray with baking cupcake liners or lightly brush tray with 1 tsp of olive oil. Pour 1 + 1/2 tbsp of mixture into each cup.
- Bake for 17 minutes. Cool for 15 minutes before removing from the tray.
- In a separate bowl, whip together icing sugar, lemon juice, whipping cream, and cream cheese for 3-5 minutes until the mixture resembles melted marshmallows! Pipe onto your cooled cupcakes! Top with lemon zest/ your choice of crushed nuts.

Note: Previously I had called these muffins as technically the way it’s prepared is very muffin like but there is a cream cheese frosting so it’s also like a cupcake! Let’s just call it a delicious, carrot cake muffin with cream cheese frosting!
