Delicious Blackberry Galette

Galettes have become my new found favourite baked good to make! They are super easy to make and they always taste delicious- I mean sweetened fruit under a buttery flakey crust? What’s not to love!

What is a Galette?

A galette is basically an open-faced pie or an easier version of a pie (in my opinion). There’s no need to create a lattice or make a 2nd crust- it also basically tastes the exact same as a pie! I use my all time favourite pie dough recipe found below as a base and then I fill it with whatever fresh fruits I have at home. Typically either peaches, apples, or any mixed berries work the best as the water content isn’t as high so your galette doesn’t have too much excess water. This is super easy to make, ready in less than hour… recipe below!

INGREDIENTS

Galette Dough:

  • 1 + 1/4 cup flour
  • 1/2 cup butter, chilled and diced
  • 1/4 tsp salt
  • 1/4 ice water
  • 1 tbsp apple cider vinegar

Filling:

  • 2.5 cups of blackberries/ blueberries (frozen or fresh)
  • 1/3 cup brown sugar/ coconut sugar, and more for sprinkling
  • 1.5 tbsp cornstarch/ flour
  • 1 tsp lemon juice
  • 1 egg
  • 1 tsp raw sugar

DIRECTIONS

  1. Dough: using a food processor, combine flour and salt. Cut in butter until mixture resembles coarse bread crumbs. Stir in water and apple cider vinegar, little bit at a time until mixture forms into a ball. Wrap with plastic wrap and freeze for 10 minutes and then refrigerate.
  2. Filling: in a separate bowl, combine blackberries/blueberries, sugar, cornstarch, and lemon juice together. 
  3. Preheat oven to 375F or 350F convect. Roll out your dough onto a clean surface, approximately 10-12 inches in diameter. 
  4. Transfer onto a lined baking sheet and scoop up the berry mixture into the centre making a small pile. Make sure to leave a 2 inch border around the edges.
  5. Carefully fold in your edges toward the centre (not all the way) but to essentially make a 1 inch barrier/ crust. Pinch the seams as you work your way around the edges.
  6. Gently brush the crust/ barrier with 1 egg and sprinkle 1 tsp of raw sugar.
  7. Bake at 350F convect or 375F for 30-35 minutes until the crust is golden and the filling is bubbling.
  8. Cool and serve. Allow your galette to cool for 10 minutes before serving with some vanilla ice cream! Enjoy!
