One of my fondest memories in Taiwan was having Dan Bing for breakfast each morning. Dan Bing 蛋餅 is a Taiwanese egg roll crepe, it is usually sold by street vendors each morning. It was so fascinating watching the street vendors prepare this simple yet delicious dish so quickly! I was in awe and had to try to recreate it when I came back home.
Dan Bing is pretty much a savoury crepe with a thin scrambled egg on top that is filled with various toppings such as cheese, bacon, cilantro, pork floss, corn, scallion, or ham! It is then rolled up and drizzled with some delicious soy paste or chilli sauce!
This is one of my favourite breakfast dishes, it is so underrated and I wish to share this with you all! I promise you will love it as much as I do.

INGREDIENTS
Crepe Batter:
- 1/4 cup flour
- 1/2 cup water
- 1 tbsp cornstarch
Filling:
- 1 handful of corn niblets (if frozen you can heat in the microwave for 30 seconds)
- 1/4 cup chopped scallions
- 1 tsp sesame oil
- 1 egg
- S & P
- 1 tbsp coconut oil
- 1 tbsp oyster sauce
- 1 tbsp sweet chilli sauce
- 1 tbsp warm water
DIRECTIONS
- Using a small bowl, create the sauce using oyster sauce, sweet chilli sauce, and water. Set aside.
- In a separate bowl mix together the batter consisting of flour, water, and cornstarch together. Let it sit for 5 minutes.
- Use another separate bowl, mix together the filling mixture of egg, corn, scallion, sesame oil, pinch of salt & pepper.
- Heat up 1 tbsp of coconut oil in a small nonstick pan on medium-high heat. Add in 1/4 cup of your batter into the pan. Rotate the pan to spread the mixture around evenly. Cook for 4-5 minutes on high heat until the bottom is crispy.
- Carefully flip the crepe over. Now pour your filling mixture on top of the crepe. Cook for 3-5 minutes on medium-low heat until the egg is almost cooked. You can cover the pan to help it cook faster!
- Once the egg is cooked, carefully fold the crepe into 3 parts.
- Using a sharp knife, slice the crepe into equal parts horizontally. Top with your sauce and scallion- enjoy!
- Repeat the filling instructions for your 2nd crepe!
