The Ultimate Grilled Cheese Sandwich

This week we’re talking about grilled cheese sandwich. I’m not talking just any grilled cheese, we’re discussing the secret to the ULTIMATE grilled cheese sandwich. Everyone claims that they make the best grilled cheese sandwich but I promise you that I make the best grilled cheese sandwich. We’re talking spicy kimchi, crispy bacon, sweet and crisp apples, various of cheeses, all sandwiched between two slices of Alive & Rise Toast or your choice of thick sourdough bread. Then grilled on a cast iron for optimal texture until golden brown. Seems like a very strange combo but trust me when I say it will invoke ALL of your flavour profiles. Cheesy, buttery, spicy, what could be more?! Safe to say I’ve had many taste this grilled cheese and I promise you they all walk away claiming “it’s the best grilled cheese- ever”. Don’t believe me? Try it for yourself…

INGREDIENTS

  • 4 tbsp unsalted butter room temperature
  • 2 slices of Alive & Rise Toast or Sourdough
  • 1/2 cup shredded American cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup shredded gouda cheese
  • 1/8 cup Kimchi roughly chopped
  • 1 Ambrosia Apple (sliced)
  • 2 strips of bacon (cooked)
  • 4 tbsp unsalted butter
  • maple syrup, for serving

DIRECTIONS

  1. Using a toaster oven, toast your slices of bread on low- medium for 2 minutes. This helps to provide an extra crunchy layer prior to adding all the toppings on.
  2. Heat up a cast iron pan with 2 tbsp of butter. Spread the outside of each slice of bread with room temperature butter. 
  3. Layer the outside slice of bread onto the pan. Evenly layer in your 1/2 of your cheese, kimchi, couple apple slices, bacon strips, and the rest of your cheese. Add in the top piece of bread, butter side facing up. 
  4.  Cover with a lid and cook for 3-5 minutes until the bottom is golden brown. Carefully flip over, add in the rest of the butter (2 tbsp) and cook for 3-5 minutes until golden brown. Slice and serve with maple syrup!
