Cantonese Beef Brisket with Lemongrass | Instant Pot

Whenever I visit Hong Kong style cafes, I will always order this dish with “ho fan” noodles. This dish incorporates the most amazing flavours from the savoury beef to the incredible crunch of the daikon and carrot. All tied in together with the most amazing aroma of star anise, Chinese five spice, and lemongrass.  Traditional Cantonese beef brisket has no lemongrass, but recently I tried this and I absolutely LOVED it! If you want to stick to the traditional route, you are more than welcome to take this out. This dish still tastes delicious without it. You can then pair this dish with either noodles or a nice bowl of rice!

INGREDIENTS

  • 2 lbs of beef blade/ beef brisket, cubed into 1″ x 1.5″ pieces
  • Half a large daikon (white radish), chopped into 1″ x 2″ pieces
  • 3 carrots, chopped diagonally into 1″ x 0.5″ pieces
  • 1/4 cup lemon grass, finely diced up (optional)
  • 1/2 cup of diced white onion
  • 3 gloves of garlic, diced
  • 3 slices of ginger, sliced into 1″ long pieces
  • 1 tbsp of coconut oil
  • 1 tsp of salt
  • 1 tsp of sesame oil
Sauce
  • 2 tbsp of cooking wine
  • 1/5 cup of water
  • 1 tbsp of soy sauce
  • 1 tbsp of chu hou paste
  • 1 tbsp of Chinese 5 Spice powder
  • 1 tbsp of oyster sauce
  • 1 tbsp of hoisan sauce
  • 1 tbsp of rock sugar
  • 1 tbsp of cornstarch
Spices
  • 3 star anise
  • 1/2 cinnamon stick

DIRECTIONS

  1. Marinate your beef with 1 tsp of salt, 1 tsp of sesame oil. Set aside.
  2. Set your INSTANT POT to SAUTÉ. Combine your oil, onion, garlic, ginger. Sauté for ~2 minutes until fragrant.
  3. Combine you beef and brown the sides for ~3 minutes. Then combine your marinade and sauté together for ~2 minutes.
  4. Set your INSTANT POT to NORMAL pressure for 35 minutes. Then quick release for 15 minutes. Remove the beef from the pot and set aside. 
  5. Combine your carrots and daikon into the pot. Set your INSTANT POT to HIGH PRESSURE for 5 minutes. Then quick release.
  6. Combine the beef back with the carrots and daikon. 
  7. Garnish with chopped scallions. Serve on your choice of rice or noodles!
