Creamy Artichoke Pasta

This is a staple recipe in my household, such an easy recipe that is hearty, creamy, and so delicious! Also ready under 30 minutes is always a bonus. Almost everything here is a pantry staple so a perfect recipe during this quarantine time! A trick I use for creamy pastas is to always add in 1 tsp of lemon juice, it adds a nice touch of acidity and helps balance out the creaminess. Delicious!

INGREDIENTS

  • 250g of Bow-Tie Pasta (1/2 bag of pasta)
  • 1 tsp olive oil
  • 1 tsp salt
  • 5 strips maple smoked bacon (diced)
  • 1 tbsp bacon oil
  • 2 medium zucchinis (diced)
  • 1/2 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 can Cream of Mushroom Soup
  • 1/4 cup of almond milk/ cream
  • 1/4 cup pasta water
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1 can of Artichoke Hearts (drained and roughly chopped)
  • 1 tsp lemon juice
  • 1/4 cup parmesan cheese
  • Salt
  • Pepper

DIRECTIONS

  1. Boil 5 cups of water in a medium pot. Once boiled, toss in your pasta, 1 tsp olive oil, 1 tsp salt. Reduce heat and cook for 12-15 minutes until al dente.
  2. In a separate pot (I use a dutch oven), heat up to medium heat. Once heated, toss in your diced bacon and cook for 5-7 minutes until the edges are slightly browned. Remove from heat onto a napkin to soak up the leftover bacon oil. Drain the leftover bacon oil but reserve 1 tbsp bacon oil.
  3. In the same pot, combine your garlic and onion. Sweat the onion and garlic out for 3-5 minutes until translucent. Combine your zucchini in, put the lid on and cook for 5 minutes. 
  4. Add in your can of Cream of Mushroom soup, onion powder, and Italian seasoning.
  5. Once your pasta has finished cooking, drain the pasta water but reserve 1/4 cup of pasta water.
  6. Combine cooked pasta, cooked bacon, 1/4 cup pasta water, and 1/4 cup of milk in. Stir to combine and let it simmer and thicken slightly. 
  7. Lastly, add in your parmesan cheese, chopped artichokes, and lemon juice. Add salt/ pepper to your desired taste. Serve with fresh basil!

Note: If you are vegetarian you can opt out the bacon completely. If you are Gluten Free you can sub for Gluten Free pasta.
