Avocado, Smoked Salmon, Breakfast Bowl

A savory, easy to make, and delicious Poached Egg, Salmon, and Avocado Breakfast Bowl! Not to mention, it is gluten free, and SO delicious!

INGREDIENTS

  • 1 cup spinach (washed)
  • 1/2 cup of smoked salmon
  • 2 roma tomatoes chopped
  • 1 avocado: pitted, halved & sliced vertically
  • 1/4 of a large purple onion diced
  • Salt & Pepper
  • 2 eggs
  • 2 cups of water
  • 1 tsp of vinegar
  • 1 tsp of coconut oil

DIRECTIONS

  1. Boil 2 cups of water in a shallow pot. Add 1 tsp of vinegar into the water. 
  2. Once boiled, crack your egg into the pot one at a time. Turn the dial to simmer. 
  3. Cook for 3-4 minutes or until the egg white is set and is floating.
  4. Remove the egg with a slotted spoon and drain on a paper towel.
  5. Heat a small frying pan to medium heat, add coconut oil in.
  6. Once heated, add your purple onions, and tomatoes. Saute the tomatoes & onions together for 3-4 minutes until slightly charred. Remove from heat.
  7. Layer your serving bowl with spinach, sauteed tomatoes & onions, avocado, salmon, and poached eggs on top.
  8. Season with salt & pepper!
