I must warn you that these potatoes are EXTREMELY addicting and super delicious! They are so easy to eat and a staple whenever making my eggs benedict. I swear the secret to why these are so delicious is the brown sugar! It slightly caramelizes while cooking and provides the potatoes with the most delicate and delicious crunch! Enjoy!

INGREDIENTS
- 1 lb of small mini potatoes (3 medium potatoes) with skin on, washed & cut in half
- 2 tbsp of olive oil
- 3 garlic cloves minced (optional)
- 1 tsp onion powder
- 1 tbsp garlic plus powder
- 1 tbsp cajun powder
- 1/2 tsp salt
- 1/2 tsp paprika
- 2 tbsp brown sugar (packed)
DIRECTIONS
- Preheat oven to 425F convect.
- Combine potatoes, olive oil, garlic, onion powder, cajun powder, garlic seasoning, paprika, salt, & brown sugar into a bowl.
- Transfer onto a baking pan covered with parchment paper and CONVECTION bake at 425F for 35-45 minutes until fork tender.
