Pad See Ew, also spelled Pad Siew or Phat Si Io, is a popular Thai stir-fried noodle dish. The name “Pad See Ew” translates to “stir-fried soy sauce” in Thai. The dish typically consists of wide rice noodles that are stir-fried with a combination of meat (such as beef, chicken, or pork), Chinese broccoli (also known as gai lan or kai-lan), garlic, and egg. The noodles are coated in a flavorful sauce that includes ingredients like soy sauce, oyster sauce, and fish sauce, giving the dish a savory and slightly sweet taste.

Beef Marinade
- 8 oz thinly sliced beef flank steak or top sirloin works well
- 1 tsp soy sauce
- 1/2 tsp salt
Other Ingredients
- 225 grams flat wide rice noodles
- 5 Chinese broccoli stems, cut into 2-inch pieces
- 2 cloves garlic, minced
- 2 eggs
- 1 tbsp soy sauce
- 1.5 tbsp oyster sauce
- 1 tbsp sugar
- 1 tbsp rice vinegar
- 1/4 tsp black pepper
- 2 tsp sesame oil
- 2 tbsp vegetable oil
- 1 stalk chopped scallion for garnish (optional)
Instructions
Marinate the beef
- Combine sliced beef, soy sauce, and salt into a bowl. Set aside.
Prepare the Sauce
- In a small bowl, mix together soy sauce, oyster sauce, sugar, and black pepper. Set aside.
Cook the Rice Noodles
- Cook the noodles according to instructions or until noodles are al dente. Drain and set aside.
Cook the Beef
- Heat 1 tablespoon of vegetable oil in a wok or large pan over medium-high heat.
- Add the sliced beef and stir-fry until medium-rare, approximately 30 seconds - 1 minute. Remove the beef from the pan and set aside.
Cook the Vegetables
- In the same pan, add another tablespoon of oil.
- Add minced garlic and stir-fry for about 30 seconds until fragrant.
- Add the Chinese broccoli and stir-fry for 1-2 minutes until they are tender-crisp.
- Push everything to one sided, crack the eggs into the pan, and scramble them until they are just cooked.
Combine the Noodles
- Push the vegetables to one side of the pan and add the soaked rice noodles to the empty side.
- Pour the prepared sauce over the noodles and toss everything together until well combined.
Add Beef
- Add the cooked beef back to the pan and mix with the noodles and vegetables.
Combine and Serve
- Add in the sesame oil and garnish with scallion. Mix everything together in the pan until well combined and heated through.
