The BEST Chinese Beef & Broccoli Stir fry

Beef and broccoli is an iconic stir-fry duo- some would even dare say probably the best. I’ve grown up eating Chinese beef and broccoli stir-fry pretty much my whole life. I have vivid memories of pairing this dish with rice at the dinner table. You pair succulent and soft strip loin beef with crisp broccoli, then it’s topped with a soy sauce slurry. This combination is like no other and I’ve included all my tricks and tips to help create the BEST beef and broccoli stir-fry ever!

Secret Ingredient

Whenever you have beef and broccoli from Chinese takeout, the beef is always super tender. Some restaurants use meat tenderizer but I’ve found much success using pineapple juice. Pineapple juice contains an enzyme in the fruit, called “bromelain”, which helps to soften the meat by dividing its proteins. You have be careful when using pineapple juice as if you marinate your meat for too long, it can actually ruin the texture. I would suggest only marinating it for up to 15 minutes.

Ingredients
  

Beef Marinade

  • 2 Ribeye/Striploin steaks cut into strips
  • 1 tbsp corn starch
  • 1 tbsp soy sauce
  • 1/8 cup pineapple juice top secret ingredient
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 onion, sliced thinly
  • 1 tbsp olive oil

Broccoli

  • 2 broccoli crowns cut into pieces and washed
  • 4-5 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/8 cup water

Sauce

  • 1 tbsp corn starch
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar

Instructions
 

Beef Marinade

  • Mix together beef strips, cornstarch, pineapple juice, soy sauce, salt, and pepper together. Marinate for 15 minutes.

Cook the beef

  • Using a wok, heat up 1 tbsp of oil. Add in sliced onions and cook for 2-3 minutes until fragrant. Add in the beef mixture. Cook for 4-5 minutes until the beef is just about cooked through- medium rare. Remove from the pan and set aside.

Cook the broccoli

  • Using the same wok, add in 1 tbsp of oil. Add in garlic and sauté for 2-3 minutes. Carefully add in your broccoli (the oil will splash so have a cover ready). Add in 1/8 cup of water, put the lid on top, and cook for 3-4 minutes. Your broccoli should still be slightly firm.

Add back in beef and sauce

  • Remove lid, add back in your beef. In a separate small bowl, mix together corn starch, soy sauce, and brown sugar- add this mixture into the wok. Carefully mix together.
  • Garnish with scallion and sesame seeds, enjoy!

Notes

Notes: You can substitute beef with firm tofu, chicken, turkey breast.
